The Chinese Squat toilets are actually a modern version of the pit toilets or hole in the ground toilets you find in the rural areas of some 3rd world countries. Most of these countries do not have running water and therefore do not have modern conveniences. You handle your business by positioning yourself over a hole that has been dug in the ground. Also bring your own toilet paper or water to clean up. Watch out for snakes or scorpions that may be hiding in the hole. I bet you thank God for modern conveniences after experiencing one of these places.
